If you selected any option just to conceal your identity, the program will still meet with you and find out the truth.At that point,they are still going to deny you,if you are not what they are looking for.You would have spent your hard-earned money going to interview for nothing.It is better to be upfront with programs,if they want you,they will accept you.

If one of the options is Asian, choose that. We were taught that India is a sub-continent of Asia.
I personally choose other as European American is never on the lists.
