In proteins, birefringence is due to beta pleated sheet structure which allows the die to intercalate between folds. ? ability to protien bind

if Dinnie is correct that birefringence is due to the beta pleated sheet. Then we know that hydrogen bond hold together the secondary structure. A hydrogen bond ia a covalet bond, so therefor C. Thats the only way I can figure this answer didnt get it until dinie came with the knowledge.

Hydrogen bond is a noncovalent bond. My reference for birefringence is Wikipedia.
