Is observership important to get residency?

offcourse.
it gives you edge over other candidates, who are working in nonmedical field.

I think the observership might be important since you might get to know some people in the field, get to be known, too, do some networking, and last but not least, get some letter of recommendation. You can not work with the patient , but you can ...observe, and it only depends on you what you gain out of this.
