only B12 out of hidrosoluble vitamins is stored in our body (in liver) and this storage is enough for a few years

B12 is the only water soluble vitamin that cannot be washed easily from the body as it is stored in the liver. The stores are for 3 years ( compared with folic acid which is 3 months - so eat more green leaves). B12 is excreted in the bile & there is an efficient reabsorption through enterohepatic circulation. so, in reality - it could take more than 3 years for deficiency to develop. found only in animal sources & so vegans are at risk for deficiency.
