I am expecting to get EAD next year as my wife will be applying for GC soon. But I am not sure whether I can get it before the residency starts. If I go applying but don't show-up, since I absolutely don't want a J-1, what do you think will happen to me? Will I be barred from participating matches in the future?

Yes, you will be barred, and may have a lawsuit to deal with. This happened a classmate of mine, and she nearly ended up in court. Most GC applications are taking ~2yrs right now. Check out on immigrationportal.com to see how others have faired - depends on the class in which your wife is applying.
